Peaberries form when only one seed develops inside the cherry, giving the coffee its small, rounded shape. They roast evenly and tend to offer a slightly denser sweetness. At Mió, natural processing is the core of their microlot approach: cherries are dried on raised beds and patios before finishing in mechanical dryers.
