This is a natural process Catucai from Sitio Baixão da Serra, a 2-hectare farm in Caldas, Minas Gerais, run by Abner and Vanessa Carvalho at 1,150m. The couple bought the farm in 2011, selling their house to fund it, and have since built it into a consistent producer of quality naturals as members of the Cooxupé cooperative. Coffee growing runs through the wider family - Abner's brothers farm neighbouring plots, and the group works together at harvest and shares ideas on process and sustainability.
With just over 2 hectares under cultivation, the farm produces around 100 bags a year, and the Carvalhos focus their attention on getting the most from each harvest at every stage of production.
All lots on the farm are prepared using the same method: cherries are dried in full sun, turned regularly, piled up and covered overnight. This slower, more controlled drying reduces the risk of uneven or over-fermented drying, a technique the family has refined over more than a decade on the farm.
